If a person knows the vegetable nutrition facts for all vegetables, he or she will able to eat those vegetables that have lots of vitamin, minerals and other nutrients in them. Though all vegetables are considered to be healthy, there are some vegetables that contain more nutrients and are called as super foods. Green leafy vegetables are replete with vitamins C, E, K and many B vitamins. In addition, these vegetables also contain lots of calcium, potassium and iron. One cup of raw cabbage contains 22 calories and contains a lot of Vitamin C and fiber. Similarly, 1 cup of mustard greens, turnip green and collard beans contain between 21 to 49 calories, but have a lot of vitamins, iron and calcium.
A large sized green bell pepper contains 33 calories, 3 gm fiber and lots of Vitamin C. On the other hand, a red bell pepper contains large quantities of Vitamin A and also sizeable quantity of Vitamin C. A single cup of sweet corn has around 132 calories, more than 4 gm fiber, 5 gm protein and 17 per cent RDA of Vitamin C. A single cup of cooked eggplant has 2.5 gm fiber and around 33 calories. Tomato is one vegetable that has vitamins A and C along with phytonutrients. A single cup of cherry tomatoes contains around 31 calories. One cup of zucchini has just 20 calories and around 35 per cent RDA of Vitamin C. The same is also true for one cup of summer squash.
Vegetables like cauliflower, artichokes and broccoli should also not be neglected when making a dietary plan. They too contain a lot of fiber, Vitamin C and low amounts of calories.
Knowing the vegetable nutrition facts allows a person to make wise choices when buying vegetables. A person should take into account the nutrition value of each vegetable and then incorporate the same in his or her diet.
